Lucie Amundsen will share how a family with no agriculture experience went from a few backyard chickens to a full-fledged, industry-challenging farm. Spoiler alert: Things went wrong. In the process, Lucie discovered the complex reasons (involving USDA Census Data, economic professor and charts!) as to why local chicks are truly better — not just for those who eat their delicious eggs, but the farmers who raise them and the communities where they live.
Lucie Amundson is Locally Laid’s Marketing Chick. She is part of a Northland family running a mission-based farm in Wrenshall, Minnesota. “For us, it’s about getting Real Food to local folks, while treating livestock and the planet well in the process.” Their goal is to change the way eggs are produced in America. She is also a writer, speaker who has completed a narrative nonfiction book about Locally Laid that will be published in spring, 2016
